St Louis Style Ribs

This style of rib cut comes from the sparerib of the pig, which are located along the belly. The name refers to the trimming process resulting in a neat rectangular cut with uniform shape and a lot of meat. This cut usually weighs 3-5 lbs.

This style of rib cut comes from the pork shoulder, in particular the fatty and muscular section near the shoulder blade or boston butt, rather than the rib section. This cut is meatier and fattier than trditional ribs, which makes it flavorful and ideal for slow cooking.

This you will have to smoke or cure yourself for that authentic ham steak taste as it comes raw and unprocessed. Typical a nice thick cut from the shank of the pig.

Ham roast is a cut of meat from the hind leg of a pig, typically cured or smoked, and often cooked as a centerpiece dish. As all our meat is unprocessed it is recommended that you smoke or cure the meat for that sought after taste you're looking for.

1/2 and Whole Pig Pricing

1/2 Hog

$6.25 lb + Processing

Butchered at local USDA facility. $300 for down payment is to secure butchering, in addition to $6.25 per Ib Hhwt (100+/-) due at delivery or pick-up. 

Additional processing fees apply for patties, links, and extra packing for chops.

Whole Hog

$6 lb. + Processing

Whole hog deposit is $550. Deposit must be paid in full to secure a processing date. Pricing is $6.00 per pound per Hot hanging weight (Hhw) plus processing. Processing starts around $1.80 lb (Hhw). Includes optional processing cost for bacon. Additional Processing fees may apply for sausage links or patties. 

All Meat is processed at a local USDA butcher Facility. Meat Handler license #3577
